J o h n s o n ' s technology strips oxygen from water, e.liminating the need to i n t r o d u c e preservatives, w h o s e sole role is to stop oxidisation. In this process, the b e e r is p a s s e d over a hydrophilic m e m b r a n e , w h i c h s e p a r a t e s it from a s o d i u m s u l p h i t e s o l u t i o n o n the o t h e r side. T h e dissolved oxygen d e s o r b s from the waler, p a s s e s t h r o u g h the m e m b r a n e into the s u l p h i t e s o l u t i o n , where it is destroyed - it is c o n v e r l e d into s u l p h a t e a n d c a n n o t p a s s b a c k t h r o u g h the m e m b r a n e . Since lhe m e m b r a n e is hydrophilic, a n y t h i n g t h a t is dissolved in w a t e r c a n n o t p a s s t h r o u g h .
