1987. £37.50 (xviii + 427pages) ISBN O 471 91406 1 This multi-author edited collection, produced with students as the intended audience, represents a good undergraduate text and is also of use to the bench biochemist. The coverage of the topic is very good with a pleasing balance of basic theory and possible applications. There are no recipies given and no manufacturer is mentioned by name. The selection of authors gives a good spread of academic and industrial. Each chapter finishes with a useful synopsis. The basic content is up to date for the audience at which it is aimed. Most references are 1980--1985 in a field which is

advancing (in a practical sense) only slowly. The references therefore date the book without detracting from its value. Although the index is rudimentary, the illustrations are adequate (though a few more might help). The volume gives reasonable value for money but may be sfightly expensive, for students, as an introductory text. W.H.
