describe the diet quality associated with low-income populations; identify at least two methods used to assess diet quality for this research project; compare the differences in the food patterns and nutritional adequacy for the three ethnic groups studied; discuss some possible reasons that may account for the discrepancy in caloric intake reported by the study participants; discuss at least one nutritional implication of the study findings and its potential impact on the education directives of public health programs; describe how celiac disease affects the pathophysiology of the gastrointestinal tract; identify at least three common and three atypical clinical symptoms of celiac disease; list at least two diagnostic tests used in the clinical evaluation of celiac disease; identify at least three nutrient deficiencies associated with celiac disease and their corresponding clinical treatments; define the acronym CELIAC established by the National Institutes for Health Consensus Development Panel on celiac disease; discuss the food sources of gluten and appropriate dietary alternatives; and explain the proposed Food and Drug Administration food labeling term “gluten-free.”
