Editorial: Sixth International Hydrocolloids Conference

The Sixth International Hydrocolloids Conference was a continuation of a series of successful international conferences on science and technology of hydrocolloids, which was held in Guelph, Ont., Canada, on July 15– 19, 2002. This conference focused on the most recent advances in science, technology and applications of hydrocolloids, mostly polysaccharides and proteins, in the area of food, pharmaceutical, cosmetic, material and medical applications. The conference attracted 180 attendees from 27 countries; of these, 70% were from academic and government research institutes and 30% from industries. Twenty-one world-renowned experts delivered keynote lectures on the development and application of modern technologies, such as molecular modeling and characterizations, advances in instrumentations and methodologies. The conference also attracted 67 oral and 52 poster presentations, which covered a broad range of basic research as well as practical topics that are interested to industries. Due to the large number of submitted papers, the papers selected from the conference are divided into two special issues. The first special issue contains 18 peerreviewed articles. The second special issue will follow. I would like to take this opportunity to thank all the referees who spent time and effort to review the manuscripts. I also would like to thank the Organizing Committee members and staff from the Food Research Program, Agriculture and Agri-Food Canada for their helps and contributions; without their help, this conference would never be so successful. Finally, I would like to express my sincere thanks to Mrs Cathy Wang, who has been such a great assistant for me from the beginning of organizing the conference to the publications of the two special issues.
