The citric acid content of 27 samples of cream obtained from a separator ranged between 0.9 and 0.19 per cent. with an average of 0.13 per cent., while the citric acid content of 26 samples of mixed farm cream ranged1 between 0.10 and 0.20 per cent. with an average of 0.15 per cent.
