The 8500 is the first of CTI-Cryogenics' new Series 8000 product line. The 8500 compressor blends today's technology with fieldproven components to give reliability and high productivity. For the Model 8500 compressor, the most reliable components were selected based on substantial field experience. Currently CTI-Cryogenics users are accumulating an estimated 10 million hours of operation each month. Quick freezing technology for fruit Raspberries in many of the desserts appearing on UK meal tables this Winter will have come from Scotland's Tay Valley. And this year, much of the crop from the UK's prime raspberry growing area has been frozen using the latest liquid nitrogen technology from Air Products Limited. Air Products Cryo Quick freezers, four of which are in operation in the Dundee area, comprise a bath of liquid nitrogen the depth of which is microprocessor controlled for efficiency and e c o n o m y - and a tunnel in which the liquid nitrogen vaporizes, still at -196°C and passes over the raspberries which are moving through the machine the whole time on a conveyor belt. The raspberries emerge frozen at -20°C at the rate of up to 4 ton h -1. Air Products freezing techniques offer the advantage over more conventional blast freezing methods that the fruit can be individually quick frozen (IQF). Fresh fruit is frozen solid and
remains separate, sustaining little damage through formation of large ice crystals, thus avoiding drip loss on thawing which can result in flavour, colour and aroma draining away. During a complete season, the four 52 ton liquid nitrogen tanks that serve the freezing machines are kept charged by road tankers, supplying the fruit buying companies with some 2000 tons of liquid nitrogen in total. The freezing technology and the machines themselves are adaptable for other food products: vegetables, fruit, fish and even whole meals can be handled to produce top quality food perfectly preserved.
