Water in food – The story continues

In the year 2000, scientists and also manufacturers of relevant laboratory equipment were invited to the ‘‘First International Workshop on Water Determination in Food – A Challenge for the Analysts”. It was held at the Joint Research Centre of the European Commission in Ispra/Italy. The success of this event encouraged the Scientific Committee to organise further meetings every second year. They were held in Reims/France in 2002, Lausanne/Switzerland in 2004, Brussels/Belgium in 2006, Nürtingen/Germany in 2008. The ‘‘Sixth International Conference on Water in Food” is scheduled for March 2010 in Reims/France. Some of the papers presented at these Workshops and Conferences were published in Food Food Food Food

The 5th Conference on Water in Food held in Nürtingen/ Germany consisted of four sessions: structure and dynamics, processing and stability, methodology and regulation. Twenty three oral presentations were given and 17 posters displayed. Some of the presentations are published in this special issue on the 5th conference on water in food.
