An Annotated Bibliography of Journals in Nutrition Renee Bush

The Council on Foods and Nutrition of the American Medical Association defines the field of nutrition as "the science of food, the nutrients and other substances therein, their action, interaction, and balance in relation to health and disease, and the process by which the organism ingests, digests, absorbs, transports, utilizes, and excretes food substances. In addition, nutrition must be concerned with social, economic, cultural, and psychological implications of food and eating" (Marjorie V. Dibble et al., N u t r i t i o n in H e a l t h a n d D i s e a s e . 17th ed. [Philadelphia: J.B. Lippincott Company, 1982], 12). Nutrition is clearly a multidisciplinary field, the concerns of which may overlap with those of many subject areas within the basic sciences, social sciences, and clinical disciplines. Libraries called upon to support nutrition-related education, research and/or clinical programs need to be aware of the fact that information related to nutrition will be found in the literature of such fields as biochemistry, physiology, microbiology, food technology, food science, agriculture, psychology, sociology, and anthropology, as well as in those materials more clearly designated as "nutrition literature." Having made this point, it may seem contradictory to say that the intent of this bibliography is to identify the serial titles that represent the nutrition literature p e r se. Because of the interdisciplinary nature of the field, it would be virtually impossible to identify all the serial titles that may contain relevant information for any particular library patron who needs nutrition-related materials. Consequently, the titles listed here may be viewed as representing the core of a university library collection that supports research and graduate level

education in human nutrition; selectively, many of the titles on this list may form a large part of the collection of a library serving clinicians, dieticians, and dietetic technicians. Obviously, librarians must have a thorough understanding of the needs of their patrons if they are to identify and procure those publications in related fields that would best supplement those that are "strictly nutrition." The publications chosen are those deemed to be of interest to scholars and practitioners in the field of human nutrition. There are no representatives of the alternative medicine literature nor of the myriad popular publications that cover such topics as natural foods, vegetarianism, macrobiotics, or weight control. Journals dealing principally with veterinary nutrition or food science and technology have also been omitted. Only English-language or predominantly English-language titles have been included. At least one entire volume has been examined for each title unless noted otherwise. Circulation figures where given have been taken from the twenty-fifth edition (1986-1987) of Ulrich's International Periodicals Directory. Indexing information has been obtained from RLIN records, Ulrich's, The Serials Directory: An International Reference Book (second edition, 1987), and current issues of the journals. The abbreviations for the index and abstract publications are those utilized in Ulrich's. Subscription prices listed are the institutional, U.S. surface-mail rates given in the current issues or in Ulrich's. The quotations in the annotations are statements contained in the publisher's information supplied with each issue or in the instructions to contributors.
