Food and Nutritional Supplements. Their role in health and disease. J.K. Ransley, J.K. Donnelly & N.W. Read (Eds). Springer, Berlin, 2001, 197 pp., ISBN 3-540-41737-0, DM 129.90 This book is well-conceived and serves a genuine need. There is an ever-increasing body of scientiUc knowledge on the nutrients in foods and their impact on health. However, critical examinations of the application of this knowledge in the Ueld of nutritional supplementation are uncommon. The book is meant as a handbook for libraries. The initial three chapters are overviews of the food supplement market, nutrient requirements through the life-cycle, and the role of the placebo effect in nutritional supplements. The remaining chapters cover selected individual supplements and diseases. Although the editors state the book is aimed at health professionals, perhaps one inconsistency in the book is the level at which it is written: several chapters are written in a style clearly accessible to the general reader, while others are much more technical (for example, the chapters on pro- and pre-biotics). The book, most of which is written by established academic nutritionists from the United Kingdom, attempts to bring together the current knowledge on food and nutritional supplements. This is a broad area and the editors have struggled to cover it in one slim volume. The emphasis given to individual nutrients and diseases is understandably limited. Only vitamin B6, folic acid and the antioxidants are given individual chapters. Similarly, only coronary heart disease and rheumatoid arthritis are given detailed treatment in chapters, and then later only in regard to Ush oil therapy. Pre- and probiotics and phytoestrogens are discussed in well-written and perceptive chapters. Although the book is necessarily limited in scope, the issues that are addressed are done so in an exemplary fashion. In general, the book is a useful addition to the literature in this area. Watson, Woodhead Publishing Ltd., Cambridge, England, 2001, 322 pp., ISBN: 1-85573-462-1, @135.00 The 14 chapters of this volume are written by well-known authors and experts. The introduction overviews the nature and origin of chemical food contaminants. Of course, scientiUc evidence focuses on a rather small number of better studied contaminants and the present efforts consist of the agreement on international standards for their control (Codex Alimentarius Commission). Part 1 deals with analytical methods and methodology. The risk analysis concept and its scientiUc basis, the (quantitative) risk assessment process are outlined. The
