The non-meat nitrogen is deducted from the total nitrogen content in the finished product to yield meat nitrogen. Since the resultant value obtained is for meat nitrogen, it is possible to apply the factor 6.25 for conversion to meat protein. NEW PRODUCTS! PROCESSES Digital Set Point Control Industry's very first digital set point control designed to turn equipment On and Off at designated temperatures has been introduced by HEAT-TIMER Corporation of Fairfield, New Jersey. Its unique and exclusive feature is its continuous digital display of both the set point and the temperature at the sensor probe location. Digi-SPAN is a simplified operating temperature control for such devices as processing equipment in the food, chemical, and other manufacturing industries as well as such general equipment as pumps, boilers, fans, airconditioners and refrigerators. Typical application are: as an outdoor air temperature stat, as a boiler operating aquastat control and as a temperature alert for frozen products. For further information contact M. Sulphites Concern Health problems associated with the use of sulphites is presently being monitored by Health and Welfare Canada. Sulphites are used as freshener and/or preservatives on fruits and vegetables. Some asthmatics have experienced mild to severe reactions to the substance, including breathing difficulties, gastro-intestinal disturbances, acute asthma attacks and possibly shock. Consumers are urged to read ingredient labels if they wish to avoid sulphites. Sulphiting agents include sulpher dioxide, potassium metabisulphite, sodium sulphite, sodium metabisulphite, sodium bisulphite and potassium bisulphite. Of greater concern, however, is the use of sulphites in foodservice operations. They are often used in salad bars. As a result of consultation with Health and Welfare Canada, the Canadian Restaurant and Foodservices Association (CRFA) has decided to make its members aware of the problem and discourage them from using sulphiting agents. Health and Welfare Canada is planning to produce an information sheet on sulphites to alert consumers to the problem. xx / Affaires de I'Institut
