Recent IDF publications BULLETIN OF IDF Minimum Standards for Dairy Education by IDF Group qf Experts FI4-Daily Education The papers presented here examine current manpower needs of the modern dairy industry and the various educational alternatives available today to fulfil those needs. The programmes available for countries with a developing dairy industry, and strategies for recruitment of high-quality students to maintain the supply of educated professionals for the dairy industry are also covered. A “List of literature sources used in dairy training” is provided in the Appendix. Protein Standardization-The Case of Liquid Milks Abstracts qfthe IDF Symposium held in Sandton, South @ica, 19 October 1996 Protein standardization of liquid milks for direct consumption is a complex issue. Although several economic benefits have been identified. there are also a number of risks, particularly at the macro-economic level in some countries. The 10 abstracts presented here deal with: ~~ the normal variations of the protein content of the milk ~ the micro- and macro-economic factors ~ consumer attitudes and expectations in France. Implications of Microfiltration on Hygiene and Identity of Dairy Products Proceedings qf the Conference held in Sandton, South Africa, 22 October 1996 The five papers in this publication present the proceedings of a symposium organized during the 1996 IDF Annual Sessions to focus on the various aspects of current uses and future promises of microfiltration in the dairy industry. Attention is drawn to the various technical opportunities, possible regulatory hurdles and practical industrial experience with the use of microfiltration as a novel processing technique in the production of conventional consumer products. Genetic Manipulation of Dairy Cultures - Report of Subject F23 Rapporteur: M. J. Gasson (United Kingdom) The molecular genetics of lactic acid bacteria has grown into a very significant activity that is generating rapid advances in knowledge and technology. There are increased opportunities for application in the construction of improved and novel starter strains. The size of the field makes it difficult to do justice to all of the specific advances in a brief review of recent progress. This report is not comprehensive but includes some highlights that illustrate the state of lactic acid bacteria genetics. An issue of some significance is the increased relevance of a whole genome sequencing project for Lactococcus and the difficulty of funding such a project.
